"Cod Fish or Salt Fish...If you will"

Cod Fish forms a part of Jamaica's National
Dish, which is a "Ackee & Saltfish". It is
known informally as "Salt Fish" and is also
a favourite of Jamaican Nationals.

It is very expensive and costs upwards of
$100.00 per pound.  It is used in a variety
of ways, but is mostly preferred as part of
the duo in our National Dish.

It is very easy to prepare and can even be
had without cooking.  Since curing with salt
is the method by which it is prepared, it is
always wise to ensure that it is boiled prior
to using as part of a dish or at least soaked
to lose some of the saltiness.

Cod Fish is not native to Jamaican waters and
as such is imported for consumption.  Strange
that a food item that has to be imported can
form such an important part of our favourite
meal.

8 oz Cod Fish  (preferably soaked overnight)

1 medium onion (finely chopped)

1 egg lightly beaten (optional)
1 cup plain flour
1 teaspoon  baking powder
1/2 teaspoon salt
1/2 cup water
2 teaspoon  butter or margarine, melted
2 tablespoon vegetable oil
1 pepper (finely chopped)

oil for frying

METHOD

1.         Prepare fish by removing  all bones and skin.
2.         Flake fish.

3.         Heat cooking oil in frying pan and saut?©  the onion  and chopped pepper.

4.         Sieve flour, baking powder and salt together.

5.         Add beaten egg (if used) and water, melted butter or margarine
6.         Mix ingredients well.

7.         Add onion & pepper to form a thick batter.

8.         Heat oil in frying pan and drop mixture by tablespoons  into hot oil.

9.         Fry until golden brown.

10.       Fritters can be served solo or with a dip or spicy sauce.

Fritters are easy and inexpensive to prepare and can

be used as snack food.  They are also a hit at informal

parties and go a long way.
