 I hope that this week has started off well for you.
Me?  Things are pretty much OK with me.  

Everybody loves cheese, right?  Well, most of us
anyway.   This week we will explore callaloo, which
is a vegetable.  We will be preparing it with cheese
in a Casserole.

"Callaloo & Cheese"

 I do not know how many of you are familiar with
callaloo.  It is a green, leafy vegetable that is
grown in Jamaica.  I suspect that it is also grown
on other islands, but I do not know if is eaten by
non-Jamaicans.  I say this as Ackee, is something
that only Jamaicans eat from so many islands in the
Caribbean. These days, with modern technology, both
Ackee and Callaloo are canned and sold on the
overseas market.

Callaloo is prepared by stripping the stems, cutting up
both stem and leaves and steaming in a covered pot,
after washing of course.

It is usually seasoned naturally, using onions, thyme,
tomatoes, pepper etc. It can be accompanied by fish
(cod fish) or meat in the form of sausage or pork. You
may also make innovative meat choices!


This vegetable is eaten with a variety of food items
yam, potato, dumpling, bread, rice, you name it.  It
is a healthy, nutricious alternative to meat and is
chock full of iron and is usually recommended for
intake in those who suffer from anemia.

The combination with cheese makes this even better
as cheese provides Calcium, Protein, Iron,  Vitamin A,
Phosphorus, Potassium and Fat, which the body needs
in moderation.

Have fun with this week's recipe.  It is quick and easy
to prepare.

     Ingredients
 
2 cups callaloo (cooked)
2 ounces breadcrumbs
Paprika
2 ounces Cheese (grated)
 
White Sauce
 
2 tablespoons Butter
1/4 teaspoons Salt
1 cup Milk
2 tablespoons Flour
1/4 teaspoon White Pepper
 
METHOD
 
1. Start with White Sauce by melting butter in sauce 
     pan over low heat. 
       
       
2. Blend in Flour and Pepper. 
 

3. Cook over low heat, stirring constantly until mixture
     is smooth and bubbly. 
 
4. Remove from heat.  Stir in Milk, then heat to boiling
    stirring constantly.  Boil and stir one minute.
       
 
5. Grease Casserole Dish.  Place callaloo in the dish and
     pour sauce over it distributing it evenly.  Sprinkle
     with cheese and breadcrumbs. 
       
6.  Place in a hot oven (400 degrees Fahrenheit) for 15-20 
     minutes, or until set.
       
7. Remove from oven and garnish with rings or hard boiled
    eggs.  Sprinkle with Paprika and serve hot. 
       
8. Enjoy!

Callaloo cooks very easily.  Cook in 2 tablespoons of oil or
butter.  It is done in a very short time, as with other
vegetables, so be careful not to overcook.
