WINTER RECIPES
Warm Vegetable Salad with Balsamic Dressing
Ingredients:
450g thin leeks
salt and freshly ground black pepper
700g carrots
5 tbsp vegetable oil
3 level tbsp caster sugar
4 level tbsp chopped fresh tarragon
150ml white wine
5 tbsp olive oil
3 tbsp balsamic vinegar
2 little gem lettuces
1bunch or 75g watercress
Method:
Slice the leeks diagonally into 50mm lengths.
Bring a large pan of salted water to the boll add the leeks and boil
for 30 seconds. Drain the leeks and plunge into ice cold water.
Drain again thoroughly and set aside.
Slice the carrots very thinly lengthways. Bring a pan of water to
the boil add the carrots and boil for 30 seconds.
Drain and plunge into ice cold water.
Drain again thoroughly and set aside.
In a large frying pan heat 2 tbsp vegetable oil.
Add the leeks and fry on the boiling plate until golden.
Remove and set aside.
Fry the carrots in 2 to 3 batches on the boiling plate in the
remaining vegetable oil adding caster sugar and 3 level tbsp
tarragon.
Cook turning regularly over a high heat for 2 to 3 minutes or until
the carrots are brown around the edges.
Remove and set aside.
Add the white wine to the pan bring to the boil and bubble until
reduced by half.
Stir in the olive oil balsamic vinegar and the remaining chopped
tarragon.
Season and set aside.
Tear the lettuce and mix it with the watercress and warm leeks and
carrots. Pour the dressing over and serve immediately.
Enhancing the flavor of even the humblest vegetable such as carrots
can make quite a simple combination of fresh young vegetables taste
delectable when served with a good dressing.

Jet Lag Can Affect Sleep
For people that travel a lot, it is
extremely important to be fresh, productive and razor sharp, however
jet lag can affect your sleep. While you can’t avoid jet lag, you
can reduce the effects of traveling from one time zone to another.
Here are some tips.
Jet lag is when your body needs to reset its clock because you are
not adjusted to the new time zone. For instance, if you fly from New
York to London, you will need to speed up your internal circadian
clock by five hours. If you fly from New York to California, you
will need to turn back your clock 3 hours. These hours can affect
your sleep habits tremendously.
Most health professionals state that for every hour in time
difference give yourself a day to adjust. For instance from a flight
from NY to LA it should take your body 3 days to adjust. Before the
flight you should sleep normally and don’t be overly concerned about
napping on the plane. A good diet is also important, you do not need
to eat excessively on the plane or before your departure, this can
make jet lag worse. However drink plenty of water and skip the
alcohol and stimulants such as caffeine.
If you will only be in an area for one or two days, try to keep your
same sleep schedule. For only a few days your body will not notice
the difference. If you are planning on flying in the near future,
take a look at the above tips on how jet lag can affect your sleep.
BEAUTY RECIPES
Foaming Vanilla Honey Bath
1 cup oil
1/2 cup honey
1/2 cup liquid soap
1 tablespoon vanilla extract (pure is better)
Mix together all the ingredients and pour into a clean bottle with
a tight fitting stopper of lid.
To use: Shake before using. Pour 1/4 cup into the bath under
running water
