RECIPES

Tomato and Sweet Pepper Soup

50g butter
350g onion cbopped
2 large red peppers de seeded and sliced
2 tbsp tomato puree
1 x 400g can tomatoes
2 tbsp cbopped parsley
1 tsp sugar
1 bayleaf
1/4 tsp dried basil
1/4 tsp dried tbyme
1 1/2 litres ligbt stock cbicken or vegetable
salt and pepper

Melt the butter in a large saucepan on the simmering plate.
Gently fry the onion and pepper until soft.
Stir in the remaining ingredients and bring to the boil.
Transfer the pan to the simmering oven for 30 to 45 minutes.
Puree the soup in a blender or processor. Warm through and adjust the seasoning.

I do not usually like tomato soup but the addition of the red peppers makes it rich and sweet. This is a good winter soup using tinned tomatoes.

Serves 8

8. Don't.....leave windows bare. The sun will fade your furniture, floors, carpets and artwork. The longer you leave your windows bare, the longer it will take you

to adjust to the most simple window covering.

9. Do.....trust your own taste. It's your space. Don't canvas the entire neighbourhood or your yoga class for approval.

1. Involve Your Kids From The Start: To help create excitement, get the kids involved in the planning process. Set aside a couple of nights to plan the trip together and allow your kids to map out stops along the way.
