Holiday Party Edible Centerpieces
Make a delightful centerpiece for
your Holiday party.
Pick a pumpkin and cut off top and
clean the inside. Place a head of lettuce inside pumpkin.
Buy skewers wooden sticks and
assorted fruits (strawberries, grapes, cantaloupe, pineapple). Cut
melons into wedges. Cut pineapple into round shapes (or different
shapes using cookie cutter).
Put fruit on sticks and stick into
lettuce head. Arrange grapes four on a stick. (can cut melon with
melon carver and place few on one stick). Arrange fruit on sticks
nicely and place into lettuce (in pumpkin) coming out in all
different directions.
You can substitute pumpkin with
basket, holiday baskets, sled basket (for Christmas) etc. Once all
the fruit is in, cover the lettuce with a curly vegetable (escarole
or any pretty garnish).

RECIPE
Almond Baked Chicken
Ingredients:
4 boneless skinless chicken breast
halves
1/4 cup flour
1/3 cup butter
1 teaspoon celery salt
1 teaspoon paprika
salt and freshly ground pepper
1/2 teaspoon curry powder
1/4 teaspoon ground oregano
1 cup slivered almonds
1 cup sour cream
1/4 cup seasoned bread crumbs
2 teaspoons butter
Method:
Combine chicken and flour in a paper bag ; shake to coat well.
Remove chicken and shake off excess. Combine 1/3 cup butter, celery
salt, curry powder, paprika, oregano, salt, and pepper. Add chicken
and coat evenly. Place in a large casserole dish; top with almonds.
Bake, covered, at 350?° for 40 minutes. Remove chicken with a slotted
spoon, drain drippings, reserving 1/4 cup. Replace chicken in
casserole dish. Combine reserved drippings and sour cream; season
with salt and pepper. Mix well and pour over chicken. Sprinkle with
bread crumbs and dot with butter. Bake, uncovered, at 350?° for 20-25
minutes, until golden.

INGREDIENT SUBSTITUTIONS
Continued from last week...
Shortening
1 cup butter or margarine can be substituted for 1 cup
shortening. When using shortening in place of butter or margarine, 1
tablespoon milk or water for each 1/2 cup shortening used may need
to be added. DO NOT substitute vegetable oil for shortening when
recipe calls for melting the shortening.
Sour Cream
1 cup plain yogurt can be substituted for 1 cup sour cream.
Sugar
1 cup firmly packed brown sugar can be substituted for 1 cup
sugar. Note: Flavor will be affected somewhat.
Sugar, Light Brown
1/2 cup firmly packed dark brown sugar and 1/2 cup sugar can be
substituted for 1 cup firmly packed light brown sugar. (Slight
flavor differences will occur.)

Edible Cookie Ornaments
Vanilla frosting
sprinkles
food coloring
ring-shaped cookies
ring-shaped fruit-flavored candy
red string licorice or ribbon
small clean paintbrushes
Place frosting in bowl, add
desired color and blend well. Place cookie on flat surface.
Lightly outline center hole with frosting. Place ring-shaped
candy over frosting, pressing lightly and matching center
openings. Decorate rest of cookie with frosting and
sprinkles. Let dry. Insert licorice or ribbon loop through
hole in each cookie, for hanging.
Reindeer Pin
one dark brown 12 inch long
chenille stem or pipe cleaner
one red 12 inch long chenille, glitter or tinsel stem
one red 1/2" acrylic or tinsel pom-pom
2 5mm wiggle eyes
one 3/4 inch pin-back
glue gun and glue stick
pencil
Head: Place a pencil across
the center of the dark brown pipe cleaner or chenille stem
and bend in half, forming a round even bend around the
pencil. Measure 2 inches up from bend and twist.
Ears: Use the pencil as before to bend each end of pipe
cleaner or chenille stem inwards. Twist ends together,
hiding them behind twist at the top of head.
Antlers: Use the pencil as before to bend a red chenille,
glitter or tinsel stem in half, forming a v-shape.
Glue antlers behind twist of reindeer's head.
Finishing: Glue on a red pom-pom for reindeer's nose and two
wiggle eyes. Glue a pinback behind the eyes.
